Chocolate Pumpkin-Seed and Cranberry Protein Balls
Back-To-School lunchbox win with this nut-free, no processed sugar treat. Minimal effort and maximum YUM!
Many schools are more than peanut-free, including tree nuts as too allergenic to pack into lunches. Within these limitations, I can see why some parents are opting for alternatives such as 'wow butter', which is a soy product that also contains palm oil, or any packaged food that boasts 'no nuts', leaving snacks and lunches high in processed foods and lacking in fresh ingredients. But these snacks are quick to assemble and much cheaper than packaged bars eith similar ingredients ( like Lara Bars). Kids have fun helping assemble these no-bake sweets and rolling them into balls (or making fun shapes). Pumpkin-seeds contain almost double the protein compared to other nuts and seeds (8.5 grams/ ounce) and tend to be more affordable than nuts. They also happen to be high in iron, magnesium and zinc. 2 cups dates |

1 cup pumpkin-seeds 1 cup unsweetened dried coconut (plus extra for rolling- optional) *Substitute rolled oats for coconut if you prefer |

2 Tbsp coconut oil |

¼ cup unsweetened cocoa powder ½ cup dried cranberries Directions ·Soak dates in warm water to soften them while you gather ingredients. ·Drain the dates and pulse to form a paste in the food processor. ·Add other ingredients, setting aside some whole dried cranberries or pumpkin-seeds to fold in if you want a chunkier texture. ·Taste and adjust- the mixture should hold together when pinched. ·Either form 1 Tbsp balls (and optionally roll the balls in a topping such as coconut, cacao or seeds, hemp hearts…) ·OR press mixture into a 6X6” pan or a loaf pan (slicing bars once it's chilled). ·Set mixture in the fridge for about an hour and keep refrigerated. These freeze well. Using a similar formula as the recipe above, you can create your own, customizing for taste, using what you have on hand or accomodating for allergies.
