Food preservation through fermentation is an ancient method that not only preserves the food, but greatly enhances the nutrition. Fermented foods such as naturally brined pickles, sauerkraut kimchi and many more are powerhouse foods for digestive and immune health.

Andrea Potter, author of DIY Kombucha- Sparkling Homebrews Made Easy, offers this workshop, where food-science meets ancient fermentation traditions. Learn how to make wild-fermented ginger beer as well as other unique homemade sodas using a ‘ginger bug’ – a yeast culture that you can make ane perpetuate right in your very own kitchen. We’ll be making sodas the oldest-fashioned way using roots, fruits, leaves and flowers from your own backyard or from exotic plants to create fizzy and refreshing sodas. In this workshop, participants will be welcomed and encouraged (but not required) to make the product(s) during the workshop. An ingredient list will be sent in advance.

Enjoy healthy garden produce for months to come by fermenting them!
T'is the season for preserving your garden treasures or farmers markets finds! Chef Andrea is well-known for her fermented foods prowess and you will go away with a firm basis for making a wide variety of healthy, high pro-biotic, fermented veggies.
This is an optional "Kids in the Kitchen" session, with Chef Andrea's delightful daughter as sous chef.

Brined Pickles
Here is what you will need to pickle-along in class:
1lb total of any single or combination of the following ingredients to pickle:
Pickling cucumbers
Hot-house mini cucumbers (long English do not work well for pickling)
Radishes
Daikon
Carrots
Green (or yellow) beans
With the optional addition of any single or combination of these flavoring ingredients:
Garlic
Dill
Ginger
Chilies (fresh or dried)
Also needed:
Salt (and natural rock or sea salt, not Pickling salt, preferably non-iodized)
1 bay leaf or grape leaf
2 Mason jars 500ml (pint) preferably wide-mouth
Knife and cutting board

Move over, flavourless veggie burger patty! Impress your family and friends with your homemade burgers, made with wholesome and tasty ingredients. In this class, we will make a batch of my fabulous Smoky Black Bean Burgers, and construct a drool-worthy DIY Burger platter, serving up dinner by the finale!
100% of proceeds go to to the Indian Residential School Survivor's Society, offering counseling and other supports to survivors and their families.
Students receive the grocery and equipment list in advance to get prepared for class.
Class is small- limited to 20 people for an intimate and interactive class.

About this event
Join our monthly vegan (or vegetarian) cook along with Rooted Nutrition's Andrea Potter, a chef and holistic nutritionist. Her workshops are engaging and the finished product always gets rave reviews.
The main theme is quick, delicious and nutritious meals for busy families. Recipes are kid-tested- by Andrea's own 2 girls.
Never heard of jackfruit?
It can be found in large grocery stores that sell imported and ethic food. Here in Vancouver it can be found at No Frills, for example and most small Asian grocery stores. You are looking for the young, green jackfruit in brine. It is very bland and fibrous so will take on the flavour of any sauce and is often used in plant-based cooking to simulate the texture of meat.
